"A beautiful challenge": we meet Giuseppe di Martino, who tells us about the Di Martino Fresh S.p.A. project and the relationship with Fava Storci.
The bond betwen the Di Martino group and Fava Storci family is rooted in a long tradition of experience, innovation and mutual trust.

Di Martino describes the exclusivity of the relationship as follows: "We can say that we are a single-brand, in the sense that in all the factories where we produce pasta destined for the whole world we have some machines or all the Fava or Storci plants, because our bond dates back a long time, even to the times of Braibanti, where Fava produced the dryers and Storci instead created the presses".
A consolidated relationship of mutual trust, which is clearly evident when Di Martino expresses himself as follows: "It is nice to be able to work for many years with the same company, because this continuity project gives you the opportunity to see both the organizational and innovative efforts of a group, but also the industrial idea that is complementary. You look for something innovative, beautiful, that can be a machine".
How did the idea for the Di Martino Fresh S.p.A. project come about?
"We sat down, right from the start, without even thinking about it, with our partner, with Michele Storci, to think in terms of both quality and, precisely, pasta."
From Di Martino Fresh S.p.A., Fava Storci installed several production lines, one for fresh filled pasta, one for gnocchi and a plant dedicated to fresh flat pasta. "Then we also put into practice the ability to make them frozen in IQF", adds Di Martino.
"We are facing a new challenge, a beautiful and interesting challenge", he enthusiastically underlines. But at the base of this project there is also passion, a deep bond with family tradition.
Di Martino explains: "It brought together the desire to work, the passion for pasta, the love for the work of our parents, our grandparents who taught us by example, without big words".
Finally, he adds: "These are things that don't happen very often, but they happen in Italy, where businesses are family businesses and where the time horizons of projects and investments are never one year, two years or three years, but five years, a generation, and in some cases, more than one generation".
Di Martino Fresh S.p.A., has a LINE OF SINGLE-SHEET FILLED FRESH PASTA and a DOUBLE-SHEET LINE, a LINE OF SHORT FRESH PASTA, TAGLIATELLE AND LASAGNE, A LINE OF FROZEN FRESH PASTA.
All Fava Storci systems boast important features, such as the preparation of the dough with the Premix® and the total vacuum technology of the tank which give an excellent color to the pasta, while the special profile of the compression screw minimizes the heating of the dough, ensuring better quality of the same and optimization of energy consumption.
Specifically, an innovative semi-automatic egg system, has been installed, which allows receiving and dosing different types of egg on three pasta production lines, even simultaneously. For production, eggs can be used from external tanks, internal tanks or from two fixed tanks that allow the mixing of egg with tomato or spinach powder.
In addition, a new generation ravioli machine has been installed, the first entirely made by Fava Storci with a revolutionary patented dosing system, as it is able to distribute a creamy filling dosed discontinuously and in phase with the forming rollers without dirtying the pasta sheet.
